Origin: Zhenghe, Jiangyang, Songxi and Fuding in Fujian Province.

Shape: fat bud, fat and tender leaf shaped like raised waves, leaf margin curled up towards the center, whole shoot, light green front surface, and white fuzz full of the black surface.

Liquid: apricot or orange yellow, clear.

Aroma: clean and fresh.

Taste: refreshing, sweet, and mellow.

Brewed tea leaves: light grey leaves, reddish veins, fat and tender bundle.

Recognizing tea: White Peony is dull lichen-colored, and its leaf is covered with white fuzz. After being brewing, it turns into an "infant flower" with the green leaf holding the tender bud. Its liquid is apricot or orange yellow, and tastes fresh and mellow.

Name origin: White Peony is made of Fuding white tea and traditionally processed. It is featured by fat and stretching leaf, fat bud, gray green color, and white pekoe; and impressed by clean and fresh pekoe flavour, mellow and sweet taste, and apricot and clear liquid. The silvery tender bud，being hold by green leaves resembles blossom. Thus, White Peony gets its name and wins a good reputation.

Leaf: White Peony is made from one leave shoot and two leaves of young sprouts. White Peony is of superior quality in white teas. Loosely rolled buds of grayish green, with white down on the backs.

Brew: This can be brewed either as a green tea, an oolong or even as a black tea, depending on the temperature of the water you choose and the length of time the leaves are steeped. Infuse 4-5g (0.14-0.18oz) in 200ml (7fl oz) water at 93?C (200?F) for 1 1/2 - 2 minutes. Strain and add more water for a second infusion. Alternatively, for one infusion, steep for 6-7 minutes. Copper yellow to light orange, tasting of spring sweetness, with a velvety finish.

Scoop: White Peony is so-named for the bloom it undergoes in hot water, to resemble the fabled flower. No wonder; it undergoes only the most ginger processing to preserve its life force.
