Since the 1970s, the Taiwanese government has actively encouraged the production of tea in this region. A festival is still organized so, that, people can taste the new harvests and learn the basics of the gong fu cha preparation method. This is festival follows the annual spring tea contest. There are more than 4,000 growers in this region who use the Dong Ding name for their teas, even if it is not actually, grown on the mountain. About 20 years ago the government designated three "official" Dong Ding growing regions. They are Zhang Yu, Yong Long and Feng Huang. Dong-ding Oolong Tea: is a kind of treasure in Oolong tea category, which tea leaves resemble a half ball, with color of blackish green. And its edge present faint yellow. After brewing, its tea water present golden, which close to the color of amber, with a special fragrance of ripe fruit. And its tea water taste mellow and thick with obviously baked flavor. As its originated from frozen top of the mountain, so named Dong-ding Oolong Tea. And as its tea production limited, which is particularly valuable. Of course, Dong-ding Oolong Tea also has function to prevent tooth decay, to reactive oxygen species, to eliminate something that hazards beauty and health, to improve skin allergies, even losing weight and so on. At the same time, Oolong tea also has effect on anti-tumor, enhancing lymphocyte, activating NK cells, and even strengthening immune function, prevention of aging, and so on.Oolong tea also contains many polyphenols, which could absorb in the body and make it out of the body together. Dongding Oolong is lightly fermented,best known in Taiwan and honored as the "Holy tea product". It is from Dongding tea garden of the high altitude. Its annual production is limited, so it is especially precious. Dongding tea has a long history. Taiwan History wrote that Taiwan has a long history of producing tea. The old annals claimed that Shueishalian (now Puli in Nantou County, Sun Moon Lake, Shuili, Chushan.etc.) produced tea. The color is like sunglo, and it can also avoid malaria and hotness. So far, the tea coming from these five cities is sold in the market, Yet Dongding oolong is the best. However the yield is very small.

Leaf: Dark green half-spheres with red edges. Brew: Rich yellow, sweet scent with a hint of osmanthus flower and lingering aftertaste.
Scoop: Brought to Taiwan from Mainland China in the 1860's, Dong Ding (Tung Ting) was found to thrive on its eponymous mountain. The earthquake of 1999 left Dong Ding plantations untended, when rediscovered, the tea had a new, sweet flavor from cicada deposits. Dong Ding is now grown without pesticides.
Character: The young leaves and buds brew a pale greeny-golden cup that has a superb flavour and a subtle floral aroma. It is one of the finest green oolongs.
Brewing Tips: Brew 3g (0.l0oz) in 200ml (7fl oz) water at 85°C (185°F) for 1-2 minutes. Strain and add more water for several more short steepings.

Shape: curled, hemispherical, the strips are tight and heavy. It is dark green, bright and smooth.

Recognizing: Authentic Oolong tea is full of obvious artificial flavor and roasted aroma. Its aftertaste is memorable. Dongding Oolong tea within seven years is distinguished with "green leaves embroidered with red edge". That is, the red part takes one third. The tea of a long history turns dark. The liquid has the aroma of ripe fruit.

Tasting notes: The satiny leaves rolled into tight beads are a very dark green. The infusion gives off a powerful bouquet lilac, vanilla and clover honey. The unctuous texture leads to a long finish in which the floral aftertaste combines with a fresh vegetal note.

Preparation of water /100℃ boiling water
Selection of tea / Dongding Oolong
1 Fetch appropriate amount of tea from tea caddy.
2 Pour water into the purple sand teapot, fair cup, tea cups, and warm these utensils.
3 Put some tea with a teaspoon into the pot.
4 Pour some water into the pot till tea soup overflows.
5 Scrape off the floating foam and cover the pot with a lid.
6 Filter the tea soup into fair cup.
7 Distribute the tea soup in fair cup to each smelling cup.
8 Buckle the tea cup on the smelling cup, touch the bottom of the smelling cup with both index fingers and overturn the two cups to pour the tea soup to the tea cup from the smelling cup.
9 Pick up the smelling cup, rub hands and smell the tea fragrance.
10 Drink the tea.

1 The amount of Dongding Oolong should be about 1/4 pot.

Brewing Dongding Oolong with purple clay teapot
Preparation of tea sets / the purple sand teapot, tea cups, smelling cups, tea caddy, tea holder, tea props, and tea tray.
Preparation of water / 95℃ above boiling water.
Selection of tea / Dongding Oolong.
1. Fetch proper amount of tea into the tea holder.
2. Pour the boiling water into the purple clay teapot, and then pour water into the smelling cups and tea cups.
3. Put some tea with a teaspoon into the purple clay teapot.
4. Pour a half pot of water and then quickly dispense water into the smelling cups and tea cups.
5. Brew tea until the tea soup overflows the spout.
6. Scrape off the floating foam with lid, rush it, and cover the lid.
7. Pour water from the smelling cups and tea cups into the tea tray or to flush the purple clay teapot.
8. Wipe the water outside the purple clay teapot with tea towel.
9. Pour tea soup into each smelling cup.
10. Put tea cup upside down in the smelling cup, and then steadily hold it up.
11. Quickly overturn the smelling cup and tea cup and put the tea into the tea cup.
12. Lift the smelling cup gently.
13. Rub the cup with hands and smell the fragrance.
14. Hold the cup with the thumb and index finger, and support the bottom with middle finger. Enjoy the tea.

When pouring tea soup to the tea cup,if not experienced, you can pour it directly from the smelling cup into tea cup and hold the smelling cup to feelthe aroma. For tureen, take the tureen to smell the fragrance. It doesn't need the smelling cup.

Dongding Mountain is near Deer Valley in Taiwan. The summit is called Dongding, and the foot of the hill is called Dongjiao, thus the tea in the mountain is called Dongding Oolong.
