Dating back to the time between the late Mesozoic Period and early Cenozoic Period in South West China, in this legendary and beautiful land grew a sort of mysterious plant - tea. According to the investigation of biologists, the origin of tea dates back to at least 60 million years ago. China's tea areas cover tropical, subtropical and temperate zones, these dimentional climate are described as "four-seasons vary in one mountain, and the weather differs within ten miles." Under the affects of the complexities of the natural environment, the tea trees have gradually changed to arbors, little arbors and shrubs over long periods of time. The tea tree, no matter what type it is, tends to grow in a wet, warm, clean and clear environment without any pollution.
No matter what type of tea tree it is, its new buds and tender leaves would be reproduced and manufactured to produce fascinating and healthy drinks. Green Tea
The tea that is produced without fermentation endures the process of killing at a high temperature, rolling and twisting, drying, etc.. This type of tea is called Green Tea. Dark Tea
The tea poduced after the process of Post-fermentation by microorganism is called Dark Tea. Examples include Hunan Anhua thousands-gram tea, Hubei Lao Qing Cha, pu'er tea in Yunnan, Guangxi six-fort tea and Ya'an Sichuan Tibetan tea.
Dark Tea reveals the spirit of the Buddhist scripture. The Buddhist scripture states the disciplines, pursuits of purity, syncretism and nature of the Taoism, whilst also indicating the nature of life. It doesn't matter if the tea is mature or unsophisticated. Everything has its own buddhist temper, of which Pu'er tea shows the most. People say "interesting conversation comforts the mind, yet tea relaxes the heart" which could be reversely interpreted but have the same meaning as "relaxed heart feels the tea, but comfortness enables interesting talk". To know that is to know the principle of life.
It is really amazing that just a few pieces of tea buds or leaves could produce such diverse kinds of tea. It is more fantastic that tea could be the "National Drink" Drink" popular among all ethnic groups of China and overseas. In Japan, tea is called "the beverage of atomic age"; in France, tea is known as "panacea", "medicine of long life"; in Russia, it is said "If there is no tea in life, it would be just like there is no salt in food"; in Iran, "Tea is the beautiful scenery of life line:; and in the United Kingdom, "Tea is the solution of health, happiness of the cup and the soul of drinks."
Tea - this magical piece of leaf is fashionable all over the world and has become the champion of the world's top three non-alcoholic beverages, British scholar Joseph Needham, expert of the history of Chinese science, concluded: "Tea is the fifth contribution of China to the human world, following the great four inventions of gunpowder, papermaking, printing and the compass."
Yellow Tea
The tea after a process of slight fermentation, during which the tea is turned yellow in hypoxia and drying, is known as Yellow Tea. Examples include Junshan silver needles, Mengding Huangya, Huoshan Huangya and Wenzhou Huangtang,etc.. Yellow Tea is cantabile. It floats erectly on the surface of the water in the cup,waving with the water. It looks like singing in the vastitude of the blue sky and the casualness of the white clouds. But sometimes, it sinks to the bottom of the cup deeply recalling the good past times.
White Tea
No rubbing, no frying, just after two procedures of withering and bake drying, the tea through this process is called White Tea. Fujian White "Tea is the speciality, for instance, Baihao silver needle, White peony and Gongmei.
White Tea is a poem. Poems express the heart. White Tea uses the most refined language to show us what the really simplified philosophy of life is. Poems rhyme, the rhyme and flavor of White Tea is pure. Whilst boiling, the blood occurs and makes people break into tears.
